Ingredients

  • 80 g smoked salmon
  • ½ avocado
  • 2 boiled eggs
  • 80 g cherry tomatoes
  • 50 g baby spinach
  • 1 tbsp extra virgin olive oil
  • 1 tbsp sesame seeds

Step by step

  1. 1

Boil the eggs in boiling water for 8 minutes. Place in cold water and peel.

  2. 2

Place the spinach as a base in a bowl.

  3. 3

Distribute the sliced avocado, rolled smoked salmon and eggs cut into quarters.

  4. 4

Add halved cherry tomatoes and drizzle with olive oil.

  5. 5

Sprinkle with sesame seeds and freshly ground pepper.

Tip: For an extra touch, add some fresh dill leaves.

Tips

  • Boil eggs for 8 minutes for a firm yolk or 6 for a creamy yolk.
  • Squeeze lemon juice over the avocado to prevent browning.
  • Smoked salmon is already salty — moderate the salt in the rest of the dish.
