Ingredients
- 200 g grilled chicken breast
- 100 g romaine lettuce
- 80 g cherry tomatoes
- 20 g grated Parmesan cheese
- 30 g whole wheat croutons
- 50 g 0% Greek yogurt
- 1 tbsp Dijon mustard
Step by step
- 1
Season the chicken breast with salt, pepper and herbs. Grill for 5-6 minutes per side.
- 2
Wash and cut the lettuce into large pieces. Place in a large bowl.
- 3
In a small bowl, mix the yogurt with mustard, lime juice, salt and pepper for the dressing.
- 4
Add the tomato, sliced chicken, croutons and Parmesan to the lettuce.
- 5
Drizzle with dressing and mix gently before serving.
Tip: Add the dressing just when eating so the lettuce doesn't wilt.
Tips
- Shave the Parmesan cheese into thin flakes with a vegetable peeler.
- Make croutons at home: dry whole wheat bread in the oven with olive oil and garlic.
- The dressing tastes better after resting for 10 minutes in the refrigerator.
